Make an easy meal for the family with this Big Family Healthy Chicken Drumsticks and Vegetable Easy Oven Dinner recipe. It is a healthy, classic dish that is the perfect source of vitamins, protein, and nutrients. It is excellent for growing children and adults to eat for dinner or lunch.
- 6 pounds chicken drumsticks
- 2 pounds sweet potatoes, peeled and cut into chunks
- 1 pound baby carrots
- 1 red onion, cut into wedges
- 2 (12 ounce) bags frozen green beans
- 2 tablespoons olive oil
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried parsley
Preheat oven to 400 degrees. Prepare two (9×13) casserole dishes with nonstick cooking spray. Large rimmed sheet pans can also be used but are not recommended for freezing.
In a small bowl, mix together the dry seasonings together.
Divide the vegetables between the two casserole dishes. Drizzle with olive oil and sprinkle with half of the seasoning mix. (Reserve the other half for seasoning the chicken.) Toss the vegetables to coat.
Rub the chicken legs with the remaining seasoning (or place into a large zip-top container and toss with seasoning.) Lay chicken legs over the vegetables.
Cover the casserole dishes with aluminum foil and bake for 60 minutes.
Remove the foil and check the chicken for an internal temperature of 165 degrees without touching the bone.
Turn the oven to broil and allow the chicken to crisp as desired.
