Description

When you need a meal that you can make ahead and freezer for later, the Big Family Low Carb Beef and Peppers Freezer Meal Casserole is the perfect option. It is a savory dish loaded with flavor that contains plenty of vitamins and nutrients for your family.

 


Ingredients

  • 3 pounds ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 green bell peppers, seeded and diced
  • 1 red bell pepper, seeded and diced
  • 1 (28 ounce) can petite diced tomatoes
  • 2 medium cauliflower, riced
  • 1 cup beef broth
  • ¼ cup tomato paste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups shredded mozzarella cheese

 


Instructions

 

  1. Preheat oven to 350 degrees. Prepare two (9×13) casserole dishes with nonstick cooking spray.

  2. In a large skillet, brown the ground beef with onion. Cook until the beef is crumbled and no longer pink. Drain well. 

  3. In a large bowl, stir together all remaining ingredients EXCEPT the cheese. Evenly divide the mixture between the two casserole dishes.

  4. Top the casseroles with cheese.

  5. Bake for 30 minutes or until the peppers are tender and the cheese has melted.
