When you need a meal that you can make ahead and freezer for later, the Big Family Low Carb Beef and Peppers Freezer Meal Casserole is the perfect option. It is a savory dish loaded with flavor that contains plenty of vitamins and nutrients for your family.
- 3 pounds ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 2 green bell peppers, seeded and diced
- 1 red bell pepper, seeded and diced
- 1 (28 ounce) can petite diced tomatoes
- 2 medium cauliflower, riced
- 1 cup beef broth
- ¼ cup tomato paste
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 cups shredded mozzarella cheese
Preheat oven to 350 degrees. Prepare two (9×13) casserole dishes with nonstick cooking spray.
In a large skillet, brown the ground beef with onion. Cook until the beef is crumbled and no longer pink. Drain well.
In a large bowl, stir together all remaining ingredients EXCEPT the cheese. Evenly divide the mixture between the two casserole dishes.
Top the casseroles with cheese.
