What You’ll Need to Make the Chicken and Swiss Casserole with Broccoli

Make your Low Carb Chicken and Swiss Casserole with Broccoli using the following ingredients:

  • Chicken Breast. Use boneless chicken breast cut into cubes or shredded into pieces. Precook the chicken in your instant pot or air fryer.
  • Onion. Chop your onion into small pieces.
  • Cream Cheese. Make sure you leave your package of cream cheese out for a few minutes to allow it to reach room temperature.
  • Garlic Powder. Add flavor to your casserole with garlic powder.
  • Broccoli Florets. Thaw your package of broccoli florets before using them.

You’re going to need a few other ingredients, such as olive oil, heavy cream, eggs, shredded Swiss cheese, salt, and pepper. You can also use slivered almonds to add a crunch to this dish, but they’re optional.

What flavor cream cheese do I use?

You can use an eight-ounce brick of cream cheese or an eight-ounce container full of softened cream cheese. The plain cream cheese keeps the recipe just the way it is. However, if you prebought flavored cream cheese and want to use it up, you can certainly use that as well and enjoy a more flavorful dish. You know me, I like to shop for great deals and use what I have. So if you have chives or sour cream and onion, or jalapeno, then by all means use it up.

Do I use fresh broccoli?

You don’t need to use fresh broccoli for this recipe. You’ll need a single bag of frozen broccoli thawed out before adding it in with the rest of your ingredients. Again, make use of what you have or what’s on sale. I’m all about saving money and I know you are too.

Should I add the almonds to this casserole?

If you’d like to add a slight crunch to the meal with your chicken, cheese, and broccoli, adding almonds is a great choice. Not only do they improve the texture, but they also contribute to the flavor of the dish.

What type of chicken should I use?

Make sure you’re using boneless, skinless chicken breast for this recipe. You can prepare it in advance by making it in the instant pot or making chicken in the air fryer, grilling it, frying it in a pan with a bit of butter or oil, or boiling it. You can chop it into small pieces or shred it. If you’re going to shred it, use two forks or a hand mixer to make the process easier.

Can I make the same dish with cauliflower instead of broccoli?

If you don’t like broccoli or don’t have it available at the moment, you can follow all the instructions in this recipe while replacing the broccoli with cauliflower. The Big Family Low Carb Chicken and Swiss Casserole will still taste great!

Ingredients

  • 10 cups cooked boneless, skinless chicken breast, cubed or shredded
  • 2 small onion, diced
  • 2 teaspoon olive oil
  • 2 (8 ounce) package cream cheese, room temperature
  • 8 eggs
  • 2 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 4 cups shredded swiss cheese, divided
  • 2 (12 ounce) package broccoli florets, thawed
  • 1/2 cup sliced almonds, optional

Instructions

  1. Preheat the oven to 350 degrees. Prepare two 9×13 baking dishes with nonstick cooking spray.

  2. In a saucepan or small skillet over medium-high heat, saute the onions in oil until softened, about 5 minutes.

  3. In a large mixing bowl, mix together the cream cheese, eggs, heavy cream, and seasonings until the eggs and cream cheese are well blended. Stir in the chicken, 1 cup of swiss cheese, and the broccoli.

  4. Transfer the mixture to the prepared baking dishes.

  5. Top the casserole with the remaining cheese and the sliced almonds.

  6. Bake for 30 to 35 minutes or until the eggs are completely set in the middle.

  7. Allow the casserole to rest for 5 minutes before slicing and serving.
