Choosing a breakfast that can feed a large family can be hard, which is why I work so hard to bring you meals that can feed so many. I’m going to walk you through how to make these enchiladas! Breakfast Enchiladas | Large Family Breakfast Recipes

Don’t worry, you aren’t going to be biting into a piece of chicken at 8 AM in the morning. These enchiladas call for sausage or chorizo. It makes it perfect for breakfast because who doesn’t love sausage for breakfast?! I seriously LOVE all of the ingredients in this dish!

Ingredients for Breakfast Enchiladas

You may be surprised as to what is in these enchiladas. Using fresh ingredients, you’ll be able to get your family to try something new.

  • Sausage – If you have sausage in your freezer, go ahead and unthaw it. The sausage gives this dish so much flavor.
  • Fiesta blend cheese – This cheese makes all the difference in the world when you’re trying to make enchiladas. The fiesta blend brings the “enchilada” flavor to the dish.
  • Eggs – As you know, a lot of my breakfasts call for a lot of eggs, so make sure you keeo plenty on hand.
  • Black Olives – This isn’t an ingredient that you normally find in a breakfast dish, but trust me, you’ll want to add these.

These enchiladas might surprise your family because they are that good and use ingredients and kitchen supplies you have right in your very own kitchen!

What Tortillas Are Best for Enchiladas?

As you make these Breakfast Enchiladas, you may be wondering which tortillas are best. I like to use flour tortillas because they make the enchiladas so soft and they make it easier to roll in the future (if you ever choose to roll the enchiladas).

How Do You Keep Enchiladas From Getting Soggy?

On one hand, enchiladas are a soft food dish. However, in some ways, you can keep enchiladas from becoming even soggier. Some experts would suggest frying the tortillas in hot oil to help make them crispier BEFORE making them in a baking dish. If you prefer crunchier enchiladas, this may be the way to go!

How to Make Enchiladas Ahead of Time

There may be a time when you want to make Breakfast Enchiladas ahead of time. If this is the case, then I’m going to show you how to do this! You can make the enchiladas up to two days ahead of time. Just make sure the pan of enchiladas is tightly wrapped in foil or cling wrap – they can be stored for up to 2 days.

How to Freeze Enchiladas

If you decide you want to freeze the enchiladas, then go ahead and prepare them. After you have cooked them and have the enchiladas in the right pan, you can then FREEZE them for up to 2 months just like many of our other breakfast freezer meals. Just make sure they are tightly wrapped or even double wrap them if you can.

Description

These Breakfast Enchiladas are perfect for your next meal. Feeding a large family just got a whole lot easier. 


Ingredients

  • 2 (16 ounce) packages sausage or chorizo
  • 5 cups shredded fiesta blend cheese, divided
  • 12 eggs
  • Salt and pepper, to taste
  • 1 cup half & half or whole milk
  • 16 flour tortillas medium size
  • 1 (28 ounce) can green enchilada sauce
  • Diced tomatoes, for garnish
  • Sliced black olives, for garnish
  • Sliced green onions, for garnish
  • Diced avocado, for garnish

 


Instructions

  1. Preheat oven to 350 degrees. Prepare two (9×13) casserole dishes with nonstick cooking spray.

  2. In a large (12 inch) skillet over medium heat, brown and crumble the sausage. Drain well and return to the skillet.

  3. Whisk together the eggs, salt, pepper, and half & half. Add the egg mixture to the sausage in the skillet. Cook over medium heat, stirring as needed, until the eggs are set. Remove from heat.

  4. In the casserole dishes, add a small amount of green enchilada sauce to barely coat the bottom.

  5. Add a layer of tortillas to the casserole dish and then a layer of the sausage/egg mixture. Top the layer with cheese and then another layer of tortillas. Drizzle with enchilada sauce before adding another layer of the sausage/egg mixture, cheese, and tortillas.

  6. Finish the casseroles with the remaining enchilada sauce and cheese.

  7. Bake for 30 minutes or until the cheese is melted and the edges bubble.

  8. Before serving, top with chopped tomato, sliced black olives, sliced green onions, and/or diced avocado to garnish.
