Sometimes I’ll look in my fridge and see what I have to make for dinner. A lot of times, a bunch of chicken will be in there. I always challenge myself to make something delicious with the chicken. That is where I came up with Chicken and Green Bean Stir-Fry. You’ll love the savory flavor of this dish. Trust me when I say this stir fry will feed a large family and it does a really good job at it too!

Chicken and Green Bean Stir-Fry

Veggies can be hard to get our big families to eat. One person will like one veggie and another person will like another veggie. Green Beans have been the go-to veggie in our house for a while. When it comes to cooking yummy skillet meals, I do prefer to do veggies that everyone loves. This Chicken and Green Bean Stir Fry is an awesome way to keep everyone in the family happy. You might even have everything you need for this meal right in your own house. 

Ingredients for Chicken and Green Bean Stir-Fry

When it comes to making large meals, I do prefer it when things are easier. After a long day with the kids, it’s not like I always want to spend a lot of time in the kitchen. This stir fry will literally make your night super easy! Let’s break down some of the ingredients used in this dish. 

Chicken – I don’t know if you know that chicken is one of the cheapest ways to feed a large family. When it’s on sale, you can get it super cheap. Not to mention, it’s a very versatile protein that is just delicious. For this meal, you’ll be using 1 pound boneless, skinless chicken breast, sliced thin. 

Olive oil – One of my favorite oils to cook with is olive oil. You’ll notice that olive oil is a lot healthier to cook with but it also adds a lot of flavor. Olive oil will help you prepare this dish in no time. 

Liquid aminos – I know we’ve talked about using liquid aminos before. In case you don’t know what this deliciousness is, it’s simply a healthier version of soy sauce. When you add this to your meals, you’ll get a very salty and savory flavor. 

Ginger – I don’t know if you use a lot of ginger in your meals, but if you don’t, maybe you should start. Ginger can help add a lot of flavor to this dish, but ginger can help settle an upset stomach and it’s also anti inflammatory.

How to Store Chicken and Green Bean Stir-Fry

After you’ve made this stir fry, it’s time to understand the storing process. Before you store anything in the fridge or freezer, it needs to cool down. You’ll want to make sure the stir fry isn’t piping hot when you put it in the fridge or freezer.

After the stir fry has cooled down, choose your airtight container and put the stir fry in it. You can store it in the fridge for 3-5 days.

Description

Try a new dish this week called Chicken and Green Bean Stir-fry. The whole family will love this savory dish! 


Ingredients

  • 2 pound boneless, skinless chicken breast, sliced thin
  • 2 tablespoon olive oil
  • 2 pound baby bella mushrooms, sliced
  • 2 (24 ounce) package fresh green beans
  • 2 onion, sliced
  • 1/2 cup liquid aminos
  • 1 cup chicken broth
  • 2 tablespoon brown sugar substitute, like Swerve Brown Sugar
  • 4 teaspoons sesame oil
  • 1/2 teaspoon white pepper
  • 2 teaspoon rice wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 teaspoon xanthan gum, to thicken if desired

 


Instructions

  1. In a large skillet over medium-high heat, add the olive oil. Brown the chicken on both sides until cooked through (or almost cooked through). Remove from skillet and keep warm.

  2. To the skillet, add the onions, green beans, and mushrooms. Cook, tossing occasionally, while scraping the bottom of the skillet to remove any cooked on pieces. Heat the vegetables until the mushrooms and onions are tender and the green beans are crisp-tender.

  3. In a medium bowl, whisk together the remaining ingredients – EXCEPT the xanthan gum – to create a sauce.

  4. Add the chicken back to the skillet with the vegetables and pour the sauce over the top. Gently toss and continue to cook until the chicken is done.

  5. To thicken the sauce, stir in the xanthan gum and allow to simmer for 2 to 3 minutes. Sauce will continue to thicken after removed from heat.

 


Notes

I doubled this recipe, but if you want to make a smaller portion, here are the ingredients sizes.

  • 1 pound boneless, skinless chicken breast, sliced thin

  • 1 (12 ounce) package fresh green beans
  • 1 onion, sliced
  • ¼ cup liquid aminos
  • ½ cup chicken broth

  • 2 teaspoons sesame oil
  • ¼ teaspoon white pepper
  • 1 teaspoon rice wine vinegar
  • 2 cloves garlic, minced
  • ½ teaspoon ground ginger
  • 1 teaspoon xanthan gum, to thicken if desired
