Chicken Fried Rice Freezer Meal

Oh boy, you’re going to have to try my mad scientist plan for having several pans of Chicken Fried Rice (or “any meat” Fried Rice) in the freezer and ready-to-go for large family dinners! Over the last few months, this has become a requirement in my freezer stash. The way I do Fried Rice for the freezer is big volume and super frugal.

I’m so happy to share this large family with you and give you directions for not just one or two, but five 9×13 baking pans full! This Chicken Fried Rice freezer meal can serve as a stand-alone meal. Or you can add a big salad, steamed vegetables, or any other meal extras or adaptations you may find inspiration to do.

As a busy and blessed large family mom, I find keeping my freezer full is such a huge time saver. I never open my freezer to find a big 9×13 pan of some freezer meal dinner and think, “man, I wish I didn’t take the time to make you!” Freezer Meals help keep my world going round and I hope you find it helpful!

Chicken Fried Rice Freezer Meal Recipe

This Chicken Fried Rice Freezer Meal Recipe will feed a crowd and is easily adaptable, too. The directions below yield five 9×13 baking pans full that can be frozen for later use. Because this is such a large volume, I use various pots and pans to pull this recipe together in stages. It’s creative cooking at its finest. 🙂

Freezer Meals Ingredients 

  • Five lbs of shredded chicken (I use my Instant Pot to cook up my meat on freezer cooking day quickly. If I can think ahead enough, I might precook my chicken in my slow cooker the day before. You do what’s best for you, whichever way you can make it work in your life at the time!)
  • 2 Cups of Soy Sauce
  • 1/2 Cup Sesame Seed Oil
  • 5 LB Bag of Frozen Mixed Vegetables (I use the Bird’s Eye frozen peas, corn, and carrots). You can also cook up a variety of fresh veggies.
  • 18 Scrambled Eggs 
  • 20 cups of uncooked rice (Sounds like a lot, I know. 20 uncooked cups equals around 60 cups of cooked rice. Divide that by 5 for the 5-9×13 pans, and you’ll have about 12 cups of cooked rice per pan.)

FREEZER MEAL ASSEMBLY DIRECTIONS

  • Cook rice according to package directions. I’m currently loving my Instant Pot for making rice.
  • Precook the 5 lbs of chicken in the method that’s easiest for you on cooking day. You can also use ground beef, pork, or ham. Use the meat you have available. Also, remember that you can cut back on the amount of meat you use if necessary. (I use 5 lbs because that ends up being about 2 to 2 1/2 cups of cooked meat per 9×13 pan when I’m doing five full pans.) After your chicken is fully cooked, simmer the precooked shredded chicken in a large pan with 2 cups of soy sauce on medium heat for a few minutes. Stir the cooked meat in the soy sauce as necessary to mix in the flavor. Once soy sauce is well-blended with the meat turn off heat and set aside.
  • Pour 5 lbs of frozen mixed vegetables in a separate pot. Cook on medium heat with 1/2 cup of Sesame Seed Oil and gently toss.
  • Scramble 18 eggs and set aside.
  • Combined the cooked rice, cooked meat of choice, mixed vegetables, and scrambled eggs. This is where you may have to get creative with your pots and bowls for mega mixing. I use my 22 qt stock pot and another large container to combine all these ingredients.
  • Once your ingredients are combined creatively, divide the Chicken Fried Rice mixture evenly amongst 5-9×13 pans. 
FREEZER MEAL STORAGE DIRECTIONS
  1. Allow your meals to cool completely before placing in the freezer.
  2. Wrap each 9×13 pan with two layers of foil.
  3. Label the top of each pan with recipe name and date.
  4. Wrap each 9×13 pan with a layer of plastic wrap.
  5. Set each pan to freeze in the freezer. Do not stack the pans on top of one another until each pan is individually frozen.
FREEZER COOKING DIRECTIONS
  1. Set the desired pans of Chicken Fried Rice out in the refrigerator the evening before you’d like to serve them.
  2. Preheat your oven to 375 (oven times may vary).
  3. Remove plastic wrap and one layer of foil.
  4. Place in preheated oven for 1 hour or until heated through.
