Ingredients
Makes 5 cornbread mixes
- 4 ¼ cups flour
- 4 cups yellow or white cornmeal
- ¾ cup sugar
- ¼ cup baking powder
- 2 teaspoons salt
- 1 cup vegetable shortening
To make cornbread:
- 1 large egg
- 1 cup milk or buttermilk
Instructions

In a large bowl, combine the flour, cornmeal, sugar, baking powder, and salt. Using a fork, pastry blender, or your fingers, cut in the shortening until the mixture resembles sand.

Divide the mix into zip-top freezer bags containing 2 ⅓ cups each.

To make cornbread: Whisk together the egg and milk. Stir in 2 ⅓ cups of cornbread mix just until moistened. Lumps are expected. Transfer the batter into a square baking pan, muffin cups, or cast iron skillet. Bake in a preheated oven at 425 degrees for 15 to 25 minutes, depending on the size of the cornbread.
