Remember when I bought a whole pasture raised cow for my family and stocked our freezer with lots and lots of meat. We had lots and lots of beef ribs to consume. You could use Instant Pot country ribs recipe for those ribs or for pork ribs. The recipe is interchangeable. They are so moist and tender your family will rave over them the whole meal.

Mix all your ingredients together except the ribs and the xanthum gum/cornstarch slurry. Place the ribs in the Instant Pot and cover with sauce. Put on the lid then set it to manual high for 45 minutes. Be sure the seal is closed or nothing happens. Don’t ask me how I know. It seems like a long time but it’s important to cook them for awhile in order to get them tender and juicy.
Let them NPR (natural pressure release) for 5 to 10 minutes then do a quick release (QR). This is where you move the release valve over so the pressure comes down quickly. Be careful to not get in the way of the steam. It’s hot. Steam is weird like that. 😉
Pull the ribs out of the Instant Pot. Change the setting to saute and add either the xanthum gum or the cornstarch slurry. Do not add both! This is an either or scenario. Stir until thickens then add the ribs back and cover in sauce.

- 3 to 4 pounds country style pork ribs
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- ¾ cup beef broth
- ½ cup barbecue sauce
- 2 teaspoons xanthan gum OR 1 tablespoon cornstarch with 2 tablespoons water
Instructions

Mix together brown sugar, garlic powder, smoked paprika, onion powder, black pepper, ground cumin, beef broth, and barbecue sauce.

Place the ribs into the Instant Pot. Cover with sauce.

Close and set the valve to sealing. Set the Instant Pot to manual high pressure for 45 minutes.

Naturally release for 5 to 10 minutes before doing a quick release.

Remove ribs from Instant Pot and reset the to “saute.”

Whisk in xanthan gum or slurry (cornstarch mixed with water) and stir until the sauce thickens.

Place pork ribs back in the Instant Pot to coat with sauce.
