Instant Pot Freezer Meals for Large Families | Low Carb Buffalo Chicken Wraps

Change up your family dinner time by serving up these Buffalo Chicken Wraps! These wraps are low carb, dairy-free, and gluten-free, too!!


Ingredients

You will need the following total ingredients to make two large family freezer meals:

  • 6 lbs chicken meat
  • 2 cups Franks hot sauce
  • 4 carrots shredded
  • 4 celery stalks diced
  • 4 Tbs garlic minced
  • 6 chopped green onions
In each labeled one-gallon freezer bag combined the following:
  • 3 lbs chicken meat
  • 1 cup Franks hot sauce
  • 2 carrots shredded
  • 2 celery stalks diced
  • 2 Tbs garlic minced
  • 3 chopped green onions

Instructions

INSTANT POT COOKING DIRECTIONS:

  • Run cold water over the outside of your frozen gallon freezer bag to gently defrost the frozen food from the bag (enough to dump it out and release the food from the side of the frozen bag). Place meal in Instant Pot. Place lid on pressure cooker and seal the valve. Cook on manual high pressure for 25 minutes. Let pressure naturally release.
  • *Note the internal temp of your low carb buffalo chicken. If the internal temp is not reached place back in IP for 10 minutes and check again. Because of the variables with pressure cooking, it’s not always a perfect science and sometimes needs additional adjustments. The USDA recommendations a minimum internal temperature of 165 degrees for poultry.

SLOW COOKER COOKING DIRECTIONS:

  • For the slow cooker just set out your low carb buffalo chicken the night before to defrost in the refrigerator.
  • The next day pull your low carb buffalo chicken out of the freezer bag. Place it in your slow cooker and cook for 6-8 hours on low 0f 4 hours on high. Serve with family favorite sides such as corn on the cob!
