Instant Pot Hawaiian Chicken

Instant Pot Hawaiian Chicken Recipe

Do you love pineapple and chicken? This Hawaiian Chicken recipe in the Instant Pot is ah-mazing!!! It is FULL of flavor and super simple to make. Try this recipe and have a luau tonight at your large family table!!

Preparing Instant Pot Hawaiian Chicken

Add all ingredients except cornstarch and 2 TBSP pineapple juice to Instant Pot. Put lid on and set it to manual 10 mins. Be sure your valve is set to seal or it will take forever. Learn from my mistake, friend.

After cooking is complete, allow to natural pressure release for 10 minutes. After the 10 minutes is up, you can quick release it. Take the lid off and turn Instant Pot to saute. Using a small bowl or measuring cup, whisk the remaining pineapple juice with the cornstarch until there are no lumps. Add to the mixture in the Instant Pot and stir gently to combine. Cook for an additional 3 to 5 minutes.

Serve Instant Pot Hawaiian Chicken over rice or noodles. I like to throw some rice in a separate Instant Pot to cook at the same times as the chicken. Then all the deliciousness beeps at you at the same time. It’s like a party in your kitchen. Add a slice of pineapple to the plate and you can pretend it’s a luau.

Description

This Instant Pot Hawaiian Chicken is like a flavor party in your mouth. Serve over rice  with a slice of pineapple for fun luau theme.

Ingredients

  • 3 pounds boneless, skinless chicken thighs, cut into pieces
  • 1 (20 ounce) can pineapple chunks in juice, reserving 2 tablespoons of the juice
  • 1 red bell pepper, cut into 1 inch pieces
  • 1 red onion, cut into 1 inch pieces
  • ⅓ cup liquid aminos or soy sauce
  • 2 tablespoons sesame oil
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ⅓ cup brown sugar
  • ⅓ cup hoisin sauce
  • 2 Tablespoons cornstarch

Instructions

  1. Place all ingredients EXCEPT 2 tablespoons pineapple juice and cornstarch in pressure cooker liner. Stir.
  2. Cover the pressure cooker and set the valve to sealing. Cook on “manual” or “pressure cook” for 5 minutes. Release naturally for 10 minutes before quick release to remove the remaining pressure.

  3. Remove the lid and turn the pressure cooker to “saute.”

  4. In a small bowl, stir together the reserved pineapple juice and cornstarch to create a slurry. Pour into pressure cooker and stir gently to combine. Allow chicken to simmer for 3 to 5 minutes or until the sauce thickens.

  5. Serve over rice or noodles.

Notes

About 1 teaspoon xanthan gum can be substituted for the cornstarch.

Swerve Brown Sugar substitute can be used to replace the brown sugar.

Barbecue sauce can be substituted for the hoisin sauce although it will alter the flavor.
