You’ll need the following ingredients to prepare the Large Family Breakfast Casserole Bowls:
- Ham. Dice your ham into small pieces before you use it. You can make ham in the instant pot!
- Bell Peppers. You’ll need yellow, green, and red bell peppers for this recipe. Make sure you’re seeding and dicing the peppers into small pieces.
- Shredded Cheddar Cheese. Enhance the taste of your eggs and ham with lots of shredded cheese.
- Eggs. Use roughly two eggs per bowl.
The only other ingredients you’ll need are salt and pepper. Of course, you can always use additional seasonings, such as everything bagel seasoning and garlic salt if those are the ingredients you’d normally add to your eggs when eating them for breakfast.
Which type of ham should I use?
Use any type of breakfast ham that you’d like, such as applewood smoked or honey ham. If you don’t have breakfast ham, you can always use any leftover ham. Make sure you’re chopping it into small pieces instead of leaving it in large chunks.
Can I add more breakfast meat to the bowls?
If you’d like to have a meatier breakfast bowl, you can always add extra breakfast meat with your eggs and cheese. You can prepare sausage and bacon before crumbling them into small pieces and adding them to the bowls with the rest of your ingredients.
What are some other good ingredients to use?
Along with the peppers, ham, bacon, and cheese, you can always include spinach, sliced red onions, potatoes, and mushrooms in your Breakfast Casserole Bowls. Description
When you need a simple, tasty meal to serve for breakfast, make these Large Family Breakfast Casserole Bowls. You’ll have enough food to serve a wholesome breakfast to up to 12 people.
Ingredients
- 3 cups diced ham
- 1 yellow bell pepper, seeded and diced
- 1 red bell pepper, seeded and diced
- 2 green bell peppers, seeded and diced
- 4 to 5 cups shredded cheddar cheese
Instructions
To cook:
2 eggs per bowl
Salt and black pepper, to taste

Divide ham, bell pepper, and cheese between the bowls.

Seal bowls with lid and refrigerate for up to 1 week or freeze for up to 3 months.

To cook in the freezer bowls: Remove the lid and crack two eggs into the bowl and stir. Season with salt and black pepper as desired.

Cover loosely with the lids and microwave on high power for 1 minute. Stir well and microwave again for 1 minute. Check eggs for preferred doneness and repeat heating if needed.
Notes
Breakfast casserole bowls can be microwaved from the freezer but may require additional cooking time. If preferred, store ingredients in freezer bags and then transfer the ingredients to a microwave-safe ceramic mug.
