Take traditional cornbread to the next level with this Large Family Broccoli Cheddar Cornbread Casserole. It is easy to prepare, delicious to eat, and filling enough to satisfy your entire family.
- 2 cup cottage cheese
- 1 1/2 cup butter, melted
- 8 eggs, lightly beaten
- 4 (8.5 ounce) packages cornbread mix
- 2 (10 ounce) package frozen chopped broccoli, thawed and drained
- 2 onion, chopped fine
- 4 cups shredded cheddar cheese, divided
Preheat the oven to 375 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.
In a large bowl, mix together the cottage cheese, butter, eggs, cornbread mix until well blended.
Stir in the cornbread mix. Then, add the broccoli, onion, and 3 cups of cheese.
Spread the batter in the prepared casserole dish and top with the remaining cheese.
Bake for 35 to 40 minutes or until the cornbread is puffed and golden.
Remove from the oven and cool slightly before slicing and serving.
