  • Ground Cinnamon. Enhance the flavor of your muffins while using ground cinnamon.
  • Baking Soda. Make sure your muffins rise to perfection by adding baking soda to the mix.
  • Raisins. Use your favorite brand of raisins when preparing these muffins.

You will need to use a few other ingredients, including eggs, melted butter, all-purpose flour, baking powder, and salt.

Ingredients

  • 2 cups old fashioned oats
  • 2 cups buttermilk
  • 2 eggs, beaten
  • 1 cup packed brown sugar
  • ½ cup butter, melted
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup raisins

 


Instructions

 

  1. Preheat the oven to 400 degrees. Prepare two muffin tins by lining with paper liners and spritzing with nonstick cooking spray.

  2. Combine the oats and buttermilk in a large bowl and let soak for 15 minutes.

  3. Whisk the dry ingredients together in a medium bowl and set aside.

  4. Combine eggs, brown sugar, and butter together and stir into the oat mixture. Then add the wet mixture into the dry ingredients and stir until moistened. Stir in the raisins.

  5. Using a large cookie scoop or large spoon, fill the prepared muffins cups about ¾ full.

  6. Bake for 15 to 18 minutes or until a toothpick comes out clean.  Cool in the pans for 10 minutes before removing to a wire rack.
