Enjoy and a tasty and flavorful dish made on a sheet pan for easy cleanup. Veggies, shrimp, and sausage are all covered in a slightly spicy sauce.
2 pounds peeled and deveined shrimp
3 (14 ounce) packages cajun or andouille smoked sausage, sliced
1 (32 ounce) package fresh broccoli florets
12 mini ears corn, cut in half
2 pounds red potatoes, scrubbed and cut into 1- to 2- inch pieces
3 red bell peppers, seeded and cut into 2-inch pieces
2 tablespoons olive oil
2 to 4 tablespoons cajun or creole seasoning, depending on desired heat
2 teaspoons garlic powder
Salt and black pepper, to taste
Preheat the oven to 400 degrees. Prepare two large sheet pans with aluminum foil spritzed with nonstick cooking spray or rubbed with olive oil.
Place the vegetables on the sheet pan and drizzle with olive oil. Season with half of the cajun seasoning, garlic powder, salt, and black pepper. Toss to combine and then spread evenly.
In a large bowl, combine the shrimp and sausage. Drizzle with olive oil and season with the remaining seasonings. Drop the shrimp and sausage over the vegetables.
Bake for 20 minutes or until the shrimp is pink.
If desired, turn on the broiler and cook for an additional 2 to 5 minutes, watching closely.
Note: The potatoes may still be crunchy. If a softer potato is desired, cut smaller pieces or place the potatoes in the oven alone for 5 to 10 minutes before adding the additional ingredients.
