Every large family mama needs a go to meal that can on the table in less than an hour. This Instant Pot Cajun sausage, potatoes, and green beans fits that bill along with being super flavorful. It’s a great use for potatoes and green beans fresh from the garden too. What more could a mama ask for?

To make this recipe large family sized, you will need either 2 Instant Pots or your large 14 qt electric pressure cooker. We all know that I only know mega and lots and this is no exception. You need to feed all these people but unlike a slow cooker that you can pack to the top, you shouldn’t overfill an Instant Pot or any pressure cooker for that matter.
How full is too full for Instant Pot?
Your Instant Pot liner will have a max fill line. Don’t go over it. A good rule of thumb is to not fill it more than 2/3rds full. If you have a food that expands like beans then don’t go past 1/2 full. Of course, the fuller the pot, the longer it will take to come to pressure so add that to your planning times.

Now that we have that out of the way, slice your sausage into bite size pieces, cube your potatoes, and snap those green beans. Pour your broth into the bottom then throw all the stuff you just cut into the pot. Toss in the seasonings then mix it all together. Don’t be shy. Introduce all your ingredients to each other.
Throw you pats of butter on top then affix the lid. Set to manual pressure cook for 4 minutes. After it cooks, quick release it. This means turn the valve so it depressurizes quickly.

Description
This spice and hearty meal can be on the table in less than an hour. You gotta love that!
Ingredients
- 3 cups chicken broth
- 4 packages cajun sausage, cut into 1 inch slices
- 6 pounds red potatoes, scrubbed and cut into wedges
- 6 pounds green beans, trimmed
- 2 to 4 tablespoons cajun seasoning, depending on your spice preference
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1 cup (2 sticks) butter, cut into pats
Instructions

Pour broth into large 14 qt pressure cooker or divide between 2 Instant Pots.

Add potatoes, green beans, and sausage to your large 14 qt pressure cooker or divide equally between 2 Instant Pots.

Toss together with seasonings.

Top the ingredients with the pats of butter.

Cover and set to “pressure cook” or “manual” for 4 minutes.

Quick release the pressure cooker steam.
Notes
To cook in the slow cooker:
Add all ingredients EXCEPT the butter to the slow cooker, tossing together well. Top with butter. Cook on low for 4 to 6 hours.

You can plate it up for everyone or remove the hot trivet using potholders and place on the table on a trivet. If you used 2 Instant Pots then you can place one on each end of the table. The liner will be hot so you won’t be passing it around. I like to plate it then put the rest close to the table for second helpings. Believe me, your family will be asking for seconds of this recipe.
