Enjoy this large family homestyle meal. It’s easy to make in the Instant Pot and full of traditional flavor. A great meat and potatoes meal.
2 tablespoons olive oil
2 tablespoons butter – for dairy-free just use olive oil
3 pounds cooked ham, diced
1 onion, chopped
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
5 pounds russet potatoes, scrubbed and cut into 2-inch pieces
1 teaspoon garlic powder
Salt and ground black pepper, to taste
½ cup chicken stock
Freshly cracked black pepper, to garnish
Chopped fresh parsley, to garnish
Set the electric pressure cooker to “saute” until “hot.”
In the electric pressure cooker, pour the olive oil and add the butter. As the butter melts, swirl to coat the bottom of the liner.
Add the ham, onion, and bell peppers to the electric pressure cooker. Saute until the vegetables have softened slightly.
Add the chicken stock and scrape the bottom with a wooden spoon to remove any stuck-on bits.
Add the potatoes and sprinkle with seasonings. Toss to evenly distribute the ham with the potatoes.
Place the lid on the electric pressure cooker and set the valve to sealing. Program the electric pressure cooker to “pressure cook” or “manual” for 2 minutes. When the cooking cycle is complete, perform a quick release of the pressure. Carefully remove the lid.
Garnish with black pepper and parsley.
