The Ingredients You Will Need to Make the Coconut Curry Chicken

Before getting started, you will need to make sure you have the proper ingredients to make the Coconut Curry Chicken. The ingredients needed include:

  • Chicken Breast. Use boneless, skinless chicken breast. Try these make-ahead chicken recipes.
  • Garlic Powder. Add garlic powder to your chicken to enhance its flavor.
  • Curry Powder. Create the perfect Indian-inspired flavor using curry powder.
  • Fire-Roasted Diced Tomatoes. Use fire-roasted diced tomatoes for a bit of a kick.
  • Lime. Use both the zest and juice of a lime to add a tang to your Coconut Curry Chicken.

You will need a few other ingredients, including ground turmeric, white pepper, salt, coconut oil, tomato paste, coconut milk, and unsweetened coconut. You can also use cilantro to garnish your chicken after you prepare it.

Do you want to make a unique low-carb meal that will taste good? If so, you need to try this wholesome, easy-to-make Large Family Instant Pot Low Carb Coconut Curry Chicken.

 


Ingredients

  • 2 tablespoon coconut oil
  • 4 pounds boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 teaspoon garlic powder
  • 3 tablespoons curry powder
  • 2 teaspoon ground turmeric
  • 2 teaspoon salt
  • 1 teaspoon white pepper
  • 2 onion, diced
  • 1/2 cup water (if needed to deglaze)
  • 2 (15 ounce) can fire-roasted diced tomatoes
  • 2 tablespoon tomato paste
  • 2 lime, zest, and juice
  • 2 (13.5 ounce) can coconut milk
  • Unsweetened flaked coconut, to garnish
  • Chopped fresh cilantro, to garnish

Instructions

  1. Heat the electric pressure cooker using the “saute” function until “hot.” 

  2. Meanwhile, place the chicken into a zip-top storage bag. Add the seasonings and seal the bag. Shake and mash to cover the chicken in the seasonings.

  3. Add the coconut oil to the pressure cooker and then add the chicken and the onion. Brown the chicken on all sides. 

  4. If the bottom of the instant pot collects frond (baked on bits,) deglaze the bottom of the pot by adding a tiny amount of water or chicken stock and scraping with a wooden spoon. 

  5. Place all the ingredients for the sauce EXCEPT the coconut milk over the chicken. Do not stir.

  6. Cover the electric pressure cooker and set the valve to “sealing.”

  7. Program the electric pressure cooker using the “pressure cook” or “manual” function for 7 minutes. When the cook cycle is completed, quick release the pressure.

  8. Once the pressure has released, remove the chicken but keep warm. Add the coconut milk to the sauce and switch the electric pressure cooker back to “saute” mode. Cook the sauce approximately 10 minutes, stirring often, until the sauce has thickened. Return the chicken to the pot and stir to coat. 

  9. Serve alone or over cauliflower rice.
