Ingredients
- 2 family packs (about 6 pounds) boneless pork loin chops, cut into 1- to 2-inch pieces
- 2 tablespoons olive oil
- 2 cups chicken stock, divided
- 2 onions, diced
- 4 cloves garlic, minced
- 1 (16 ounce) package baby bella mushrooms, sliced
- 1 large butternut squash, peeled and cubed
- 1 tablespoon paprika
- 1 (28 ounce) can petite diced tomatoes
- 2 teaspoons hot sauce, optional
- 1 (8 ounce) package cream cheese, room temperature
- Salt and pepper, to taste
Instructions

Preheat the oven 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

Season the pork with salt and pepper as desired.

In a large skillet or dutch oven over medium heat, add 1 tablespoon of the olive oil and brown half of the pork on both sides. Repeat with the second half of the pork until all of the pork is browned. Transfer the pork to the prepared casserole dishes.

To the skillet, add ½ cup of chicken stock to deglaze the pan, scraping the bottom of the pan with a wooden spoon. Add the onion and cook until softened.

Add the mushrooms, garlic, butternut squash, and paprika to the skillet, cooking for 2 to 3 minutes or until the mushrooms and butternut squash begin to soften.

To the skillet, add the tomatoes, hot sauce (if using,) and the remaining chicken stock.

Bring the contents of the skillet to a boil. Reduce the heat to medium and cook for 3 to 5 minutes.

Stir in the cream cheese, continuing to stir until the cream cheese is completely melted. Pour the sauce over the pork pieces.

To bake, place the casseroles in the oven, covered, for 40 minutes. Then, remove the cover and cook for an additional 15 minutes.
