Here’s What You’ll Need To Make the Low Carb Peanut Butter Cookies:
- 2 cups creamy peanut butter
- 1 teaspoon vanilla extract
- 1 ⅓ cup powdered erythritol sweetener
- 2 eggs
- 1 teaspoon baking soda

Once your oven is preheated and your pan is lined with parchment paper, simply add all of your ingredients into a large bowl. Mix everything together until it’s all is blended well into your dough. This is important as you don’t want any powdered sweetener that isn’t mixed in.
Now comes the fun! Roll approximately 2 tablespoons into a ball and place it on your cookie sheet. You’ll need to repeat step this until your cookie sheet is all full. Next, take a fork and press each ball flat- making little criss cross marks into your cookie.
Bake your cookies for12-15 minutes. Done and done!

2 cups creamy peanut butter
2 eggs
1 ⅓ cup powdered erythritol sweetener
1 teaspoon baking soda
1 teaspoon vanilla extract
Instructions

Preheat the oven to 350 degrees. Prepare a large baking sheet with parchment paper.

Mix all ingredients together until well blended.

Scoop the cookie dough into balls that equal approximately 2 tablespoons. In your hands, roll each cookie dough ball until smooth. Place on the prepared baking sheet.

Press the cookie dough balls with a fork to create cross marks.

Bake the cookies for 12 to 15 minutes. Allow the cookies to cool completely on the baking sheets before removing and storing in an airtight container.
