Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups white chocolate chips
  • 1 ½ cups dried cranberries
  • 1 ½ cups chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees. Prepare a baking sheet with parchment paper.

  2. Whisk together the flour, baking powder, and salt.  Set aside.

  3. In a large mixing bowl, cream butter and sugar until fluffy.

  4. Add the eggs and vanilla, mixing well.

  5. Add the flour mixture to the batter, scraping down the sides as needed.

  6. Stir in the white chocolate chips, cranberries, and walnuts.

  7. Using a medium cookie scoop, drop the cookie dough about 2 inches apart onto the prepared baking sheet.

  8. Bake for 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 5 to 7 minutes before transferring the cookies to a wire rack to cool completely.

To make ahead and freeze:

  1. Place waxed paper on a baking sheet.

  2. Prepare the batter as directed but scoop onto the waxed paper.

  3. Roll the cookies in the cinnamon sugar mixture and return to the waxed paper.

  4. Place the baking sheet in the freezer until the cookie dough is frozen.

  5. Transfer to an airtight container and freeze up to 6 months.

  6. Follow the baking directions above! You can bake the cookies from frozen, but they will need a few more minutes added to the baking time if you chose. I like to defost the cookie dough beforehand and bake as directed.
