Ingredients
For the meatloaf:
- 4 pounds lean ground beef
- 4 large eggs, lightly beaten
- 2 (8 ounce) cans tomato sauce
- 1 ½ cups quick cooking oats
- ½ cup onion, finely chopped
- ½ cup milk (use milk-substitute for dairy-free)
- 1 teaspoon salt
- ½ cup ketchup
- 6 tablespoons brown sugar
- 2 teaspoons prepared mustard
For the vegetables:
- 6 tablespoons olive oil, divided
- 1 teaspoon garlic powder, divided
- ½ teaspoon pepper, divided
- Salt, as desired
- 2 (3 pound) bags baby golden potatoes, halved
- 1 (24 ounce) package broccoli florets
Instructions

Preheat the oven to 425 degrees. Prepare 2 rimmed baking sheets with aluminum foil and spray lightly with non-stick cooking spray.

In a very large mixing bowl, combine the ground beef, eggs, tomato sauce, oats, onion, and salt; mix completely.

Shape into 12 to 15 small loaves, depending on the desired size. Place the meat loaves on the prepared sheet pans, spacing evenly and leaving room for the vegetables to be added.

Toss the potatoes with 2 tablespoons oil, ½ teaspoon garlic powder, and ¼ teaspoon pepper. Salt as desired. Add the potatoes to the pan around the meat loaves. Bake for 25 minutes.

Meanwhile, mix together the ketchup, brown sugar, and mustard and set aside.

Also, prepare the broccoli by drizzling with the remaining oil and tossing with the garlic powder and pepper. Season with salt as desired. Set aside.

When the meat loaves and potatoes have cooked, add the broccoli to the sheet pan. Brush the meat with the glaze, return the sheet pan to the oven, and bake about 15 minutes or until a thermometer inserted into the meat loaves reads 160 degrees and the vegetables are tender. Allow to rest 5 to 10 minutes before serving.
