- 1 pound bacon, diced
- 2 onions, diced
- 2 teaspoons salt
- 1 teaspoon black pepper
- ¼ teaspoon dried thyme leaves
- 4 cloves garlic, minced or 1 teaspoon garlic powder
- 5 pounds Yukon gold potatoes, scrubbed and diced
- 6 cups chicken broth
- 1 bay leaf
- 1 cup sour cream
- 1 cup half and half
- 4 cups shredded cheddar cheese
How Do I Make Bacon Cheddar Potato Soup ?
This meal can’t get any easier to throw together. Start by preparing the bacon. Make certain that it’s crispy as you’ll need to add it later to the soup. with the left over bacon grease, fry up the onions, carrots, and celery. Cook these until softened (about five minutes) Then stir in your seasonings and garlic.
Transfer your vegetables into the slow cooker and then add the potatoes, chicken broth, and bay leaf. Cover and cook on low for 6 to 8 hours.
Now remove the bay leaf and stir in the sour cream chicken broth, and bay leaf. Cover and cook on low for 6 to 8 hours. After that just remove the bay leaf and stir in the sour cream, half and half, cheddar cheese, and half the cooked bacon. Stir until combined.
Serve topped with the remaining bacon and additional cheese if you like. Easy peasy!

Instructions

Prepare the slow cooker liner with nonstick cooking spray.

In a large skillet over medium heat, cook the bacon until crisp. Remove the bacon from the skillet and drain on paper toweling.

To the bacon grease in the skillet, add the onions, carrots, and celery. Cook until softened, about 5 minutes. Stir in the seasonings and garlic. Transfer the mixture to the slow cooker.

To the slow cooker, add the potatoes, chicken broth, and bay leaf. Cover and cook on low for 6 to 8 hours.

Remove the bay leaf and stir in the sour cream, half and half, cheddar cheese, and half the cooked bacon. Stir until combined.
