Low Carb Pizza Stuffed Chicken is the perfect addition to your dinner recipe rotation! Bonus points for being gluten-free, in addition to being low carb! It takes a few extra steps before popping this Low Carb Pizza Stuffed Chicken in the oven, but I promise you it will be worth it in the end.
How do I prepare Low Carb Pizza Stuffed Chicken?
Slice the chicken breasts in half. Pound each half until they are 1/4 in thick. This can get messy as well as being a favorite activity of the children. What kid doesn’t like to pound on things? Place the chicken piece in between pieces of plastic wrap or parchment paper to keep the mess contained.
Sprinkle chicken with salt and pepper. Add the pepperoni and cheese to the middle of the flattened piece of chicken. Roll chicken , tucking in ends. Place seam side down in your greased 9×13 baking dish. If I was doubling the recipe, I would use my large sheet pan. If freezing this meal for later, stop here.
Pour pizza sauce over all the chicken. Cook in preheated 375 degree oven for 30 to 40 minutes. Always check the internal temperature to be sure it’s at least 165 degrees.
Sprinkle some cheese and add a pepperoni piece to each chicken. I would serve with cauliflower rice, salad, or some cut up vegetables on the side. Be prepared for requests for low carb pizza stuffed chicken on a regular basis.

This low carb pizza stuffed chicken will be a winner for everyone!
Ingredients
- 6 large boneless, skinless chicken breasts
- 60 pepperoni slices
- 2 cup shredded mozzarella cheese
- 2 cup prepared pizza sauce (use a sugar-free sauce if you’d like)
- Salt and pepper, to taste
Instructions

Preheat oven to 375 degrees.

Spritz a 9×13 inch baking dish with non-stick cooking spray.

Slice chicken in half through the thickness of the breast horizontally and pound it to ½ inch thickness. (Avoid mess by placing chicken between sheets of plastic wrap or waxed paper when pounding.)

Sprinkle chicken with salt and pepper. In the middle of the chicken add four slices of pepperoni and about 1 tablespoon shredded mozzarella.

Roll chicken, tucking the edges, and place in prepared baking dish.

Pour pizza sauce over each chicken breast.

Top with remaining mozzarella and pepperoni slices.

Bake for 30 to 40 minutes (depending on the thickness of the chicken breast) or until an instant thermometer reads 165 degrees.
