You can easily put the ingredients together, cook it in the oven, and serve it to your family or take it along to the meal. The Ingredients You Will Need 

Prepare your Twice Baked Sweet Potato Casserole with Bacon using the following ingredients:

  • Sweet Potatoes. Gather the best sweet potatoes you can find to make this delicious casserole.

Big families (like mine) love Twice Baked Sweet Potato Casserole with Bacon. The best reason is that the casserole dish has a lid that goes on top of it, which makes for easy storing. It is good to keep this way in the refrigerator for at least two days. If you have leftovers, you can typically heat them back up in the oven for a few minutes and have them for lunch the next day. 

If you do not want to keep the casserole in the dish when storing it in the fridge, you can put it in a food storage container and keep it in the refrigerator for two days. Description

The Twice Baked Sweet Potato Casserole with Bacon is a sweet yet savory dish that you can eat for dinner or bring to any gathering you might attend. It is simple to make yet incredibly delicious.

 


Ingredients

  • 6 pounds sweet potatoes, scrubbed and pierced
  • 10 slices bacon, cooked and crumbled
  • ¼ cup panko breadcrumbs
  • 1 tablespoon butter, melted
  • ½ cup sour cream
  • ¼ cup butter, softened
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup chopped pecans, for topping (Optional)

Instructions

  1. Preheat the oven to 350 degrees.
  2. On a baking sheet, bake the sweet potatoes for 1 ½ hours or until they are tender when squeezed.
  3. Cool the sweet potatoes enough to peel them without burning your hands.
  4. Place the sweet potato pulp in a large bowl.
  5. Prepare a 9×13 casserole dish with nonstick cooking spray and set aside.
  6. Mash the potatoes with a potato masher or ricer. Combine the bacon (reserving 2 tablespoons for topping), sour cream, butter, salt, and pepper until well blended.
  7. Using a large ice cream scoop, place the potato mixture in the prepared casserole dish, forming tight rows.
  8. Mix the bread crumbs with 1 tablespoon of melted butter and sprinkle evenly over the top of the potatoes. Drop the bacon over the top as well as the pecans, if desired.
  9. Bake for 20 to 30 minutes or until thoroughly heated and bread crumbs are beginning to brown.
