Big Family Crock Pot Tuscan Pork Stew

This Large Family Crock Pot Tuscan Pork Stew will bring a little comfort and joy to your large family table!! With many hearty and healthy ingredients such as pork loin, tomatoes, garlic, and red pepper flakes, this will be a crowd pleaser!

Ingredients
  

  • 3 pounds boneless pork loin roast cut into pieces
  • 2 tablespoons olive oil
  • 2 28 ounce cans diced tomatoes
  • 2 cups chicken broth
  • 1 red onion diced
  • ½ pound carrots diced
  • 3 stalks celery diced
  • ¼ cup red wine vinegar
  • 2 garlic cloves minced or ½ teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • ½ teaspoon black pepper
  • teaspoon crushed red pepper flakes
  • 2 tablespoons cornstarch optional for thickening
  • 2 tablespoons water optional for thickening
  • Cooked pasta for serving

Instructions

  • Prepare a slow cooker with nonstick spray.
  • For added flavor, place a skillet over medium-high heat and add the oil. Season the pork with salt and black pepper. Add the pork to the skillet in batches, browning on all sides. Transfer the pork to the slow cooker.
  • To the pork in the slow cooker, add the tomatoes, chicken broth, vegetables, red wine vinegar, and seasonings. Cover and cook on low for 8 hours.
  • If a thicker stew is desired, mix the cornstarch and water. Stir the mixture into the slow cooker and re-cover, cooking for an additional 30 minutes, or until the stew is thickened.
  • Serve over cooked pasta.
