Preheat oven to 400 degrees
Prepare a large (21 x 15 inch) rimmed baking sheet with aluminum foil or parchment paper spritzed with nonstick cooking spray.
Using a round cookie cutter or biscuit cutter, remove the middle from each slice of bread. Arrange the bread slices on the baking sheets with the cut circles.
Melt the butter and brush butter on top of the circle cut out pieces. If you are making this dairy-free, then use oil to brush the tops or dairy-free butter spread replacement.
In the hole of each bread slice, add a sprinkle of bacon.
Carefully crack an egg over each hole and allow the egg to rest in the hole. If desired, beat the egg slightly with a fork. Top with another sprinkle of cooked bacon. Season with salt and black pepper if desired.
Place the baking sheet in the oven and bake for 10 to 12 minutes or until the eggs are set to your desired doneness.
