When you want a light and refreshing salad as a side dish, lunch, or dinner, try this Large Family Berry Blue Layered Salad. It is flavorful and full of ingredients that are good for you.
 
Prep Time 15 minutes

Ingredients
  

  • 3 stalks romaine lettuce washed and torn into pieces
  • 1 to 2 pounds strawberries washed and sliced
  • 18 ounces blueberries
  • 1 to 1 ½ cups toasted pecans
  • ½ cup sliced red onion
  • 5 ounces crumbled blue cheese

For the dressing:

  • 3 tablespoons buttermilk
  • ¾ to 1 cup mayonnaise
  • 3 tablespoons sour cream
  • 2 teaspoons white vinegar
  • ¼ teaspoon low carb sweetener or sugar
  • teaspoon garlic powder
  • Salt and black pepper to taste

Instructions
 

  • In a trifle bowl, layer half of the salad in the order of the ingredients listed, pressing down to fit all of the ingredients in the bowl. Repeat to create a second layer.
  • In a mixing bowl or mason jar, stir together the salad dressing.
  • Pour the dressing over the salad before tossing or serve on the side.
