Large Family Buffalo Chicken Macaroni Casserole Dinner Recipe

Ingredients
  

  • 2 16 ounce packages elbow macaroni
  • 8 cups cooked chicken breast cubed
  • ¾ cup butter
  • ¾ cup all purpose flour
  • 6 cups milk
  • 1 teaspoon salt
  • ½ teaspoon ground white pepper
  • 4 cups shredded Cheddar cheese
  • 4 cups shredded Monterey Jack cheese
  • 1 cup buffalo sauce or more to taste

Instructions
 

  • Prepare two 9x13 casserole dishes with nonstick cooking spray.
  • Cook the macaroni according to package directions, approximately 8 minutes in boiling water. Drain well.
  • In a large pot, melt the butter over medium heat. Add the flour and stir to combine, cooking for about 1 minute as you stir. Slowly add the milk, stirring constantly. Allow the sauce to thicken until it coats the back of a spoon. Add salt and pepper.
  • Stir three cups of each cheese and buffalo sauce into the white sauce. Mix until the cheese has completely melted and the sauce is smooth.
  • In a large bowl, toss together the pasta, sauce, and chicken, stirring until evenly blended. Divide between the two casserole dishes.
  • Top the casseroles with the remaining cheeses.
  • To bake, cook in a 400 degree preheated oven for 30 minutes.

Large Family Freezer Meal Directions:
To make this meal into a large family freezer meal simply follow the assembly directions listed above. Wrap one or both pans with foil and plastic wrap (or your favorite way to wrap your freezer meals to prevent freezer burn). Label meals and place in the freezer for several months. The day before you need this meal just place the meal from the freezer into the refrigerator. On cooking day just unwrap the casserole and follow the baking directions above. If your casserole isn't completely defrosted, you may need to add additional cooking time in 15 minute increments until hot and bubbly. Always make sure your casseroles reach and internal temperature of 165 degrees or more.
