Large Family Palmini Lasagna (Healthy Lasagna Variation)

If you enjoy the flavor of traditional lasagna, but need a healthier version,Palmini Lasagna will leave you and your loved ones craving more.

Ingredients
  

  • 3 12 ounce packages palmini lasagna noodles, rinsed and drained well
  • 3 pounds ground chuck browned and drained
  • 2 24 ounce cans prepared pasta sauce or 6 cups homemade pasta sauce
  • 2 24 ounce containers small curd cottage cheese
  • 1 cup grated parmesan cheese
  • 3 to 4 eggs slightly beaten
  • 1 tablespoon Italian seasoning
  • ½ teaspoon garlic powder
  • 4 cups shredded mozzarella cheese
  •  

Instructions
 

  • 1. Preheat the oven to 400 degrees. Prepare two 9x13 baking dishes with non-stick cooking spray.
  • 2. In a large skillet, combine pasta sauce and browned ground chuck. Bring to a simmer and heat through.
  • 3. In a medium bowl, combine the cottage cheese, eggs, garlic powder, Italian seasoning, and parmesan cheese. Stir together well.
  • 4. Pour approximately 1 cup of meat sauce into the baking dishes. Add a layer of palmini lasagna noodles.
  • 5. Add rounded spoonfuls of the cottage cheese mixture over the noodles and spread evenly. Add about ¾ cup of mozzarella cheese over the cottage cheese mixture. Top with about 1 cup of meat sauce. Begin a new layer of noodles and repeat as above. Repeat layers as desired, ending with remaining meat sauce and topping with any remaining mozzarella cheese.
  • 7. Bake for 30 to 40 minutes or until the cheese has melted and the edges are bubbly.
  • 8. For best results when slicing the lasagna, allow the casserole to rest prior to cutting and serving.

Notes

Freezer Instructions:
Once you’ve prepared the meal, you can wrap it in aluminum foil and plastic wrap or put a freezer-safe lid on it before putting it in the freezer to keep it fresh. Don't forget to add your label! You can leave the meal in the freezer for a at least 3 months before reheating. You can also assemble smaller portions into freezer-safe bags and store them that way to save space. 
 
To thaw, take your meal from the freezer to the refrigerator the day before. When you're ready to reheat, just follow the baking directions above!
