Large Family Slow Cooker Bacon Cheddar Potato Soup | Freezer Friendly Recipe!

Ingredients

  • 1 pound bacon diced
  • 2 onions diced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • ΒΌ teaspoon dried thyme leaves
  • 4 cloves garlic minced or 1 teaspoon garlic powder
  • 5 pounds Yukon gold potatoes scrubbed and diced
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 cup sour cream
  • 1 cup half and half
  • 4 cups shredded cheddar cheese

Instructions

  • Prepare the slow cooker liner with nonstick cooking spray.
  • In a large skillet over medium heat, cook the bacon until crisp. Remove the bacon from the skillet and drain on paper toweling.
  • To the bacon grease in the skillet, add the onions, carrots, and celery. Cook until softened, about 5 minutes. Stir in the seasonings and garlic. Transfer the mixture to the slow cooker.
  • To the slow cooker, add the potatoes, chicken broth, and bay leaf. Cover and cook on low for 6 to 8 hours.
  • Remove the bay leaf and stir in the sour cream, half and half, cheddar cheese, and half the cooked bacon. Stir until combined.
  • Serve topped with the remaining bacon and additional cheese if desired.
