Whether you're wanting to eat with less carbs or you love spaghetti squash, give this Buffalo Chicken Spaghetti Squash Casserole a try!

- 3 spaghetti squash cooked and shredded
- 6 cups cooked chicken cubed
- 4 eggs
- 2 cups half and half
- 1 8 ounce package cream cheese
- ¼ cup ranch seasoning mix
- ½ cup buffalo wing sauce
- 3 cups shredded colby jack cheese

Preheat oven to 350 degrees. Prepare two 9x13 casserole dishes with nonstick cooking spray.
In a large bowl, mix together the spaghetti squash and chicken. Divide between the two casserole dishes and create an even layer.
In a large bowl, beat together the eggs, half and half, cream cheese, and ranch seasoning. Pour over the casseroles.
Top the casseroles with a thin layer of buffalo wing sauce. Top with cheese.
Bake for 45 minutes or until the center is set and the cheese is melted.
Garnish with sliced green onions.
