Whether you're wanting to eat with less carbs or you love spaghetti squash, give this Buffalo Chicken Spaghetti Squash Casserole a try!

Ingredients
  

  • 3 spaghetti squash cooked and shredded
  • 6 cups cooked chicken cubed
  • 4 eggs
  • 2 cups half and half
  • 1 8 ounce package cream cheese
  • ¼ cup ranch seasoning mix
  • ½ cup buffalo wing sauce
  • 3 cups shredded colby jack cheese

Instructions

  • Preheat oven to 350 degrees. Prepare two 9x13 casserole dishes with nonstick cooking spray.
  • In a large bowl, mix together the spaghetti squash and chicken. Divide between the two casserole dishes and create an even layer.
  • In a large bowl, beat together the eggs, half and half, cream cheese, and ranch seasoning. Pour over the casseroles.
  • Top the casseroles with a thin layer of buffalo wing sauce. Top with cheese.
  • Bake for 45 minutes or until the center is set and the cheese is melted.
  • Garnish with sliced green onions.
