I like traditional spaghetti with chicken or meatballs, but I like to switch it up if I am honest. Sometimes, we all need a change. So, I decided to try this Buffalo Chicken Spaghetti Squash Casserole dish, and when I say that it was amazingly good, that is just an understatement.
This dinner is easy to prepare, especially when I need to make something quick for the family because I have so many other things to do. I love the recipe because it has such a great taste to it, but it is much lower in calories and carbs than traditional spaghetti dishes.

Buffalo Chicken Spaghetti Squash Casserole
If you follow a keto diet or try to avoid as much gluten as possible, this is also an excellent recipe for you. I am not sure about you, but I really enjoy buffalo chicken, and being able to prepare it with spaghetti squash is a bonus. This recipe makes enough for the whole family to enjoy. While it does have a bit of a kick, my kids still enjoy it, and I will usually add a dollop of sour cream to their plates to reduce the dish’s heat level for them.
How to Prep With Ease When Making the Buffalo Chicken Spaghetti Squash
You will need spaghetti squash and chicken to make this recipe, but there are some ways to make the preparation process even easier. I like to purchase squash and turn it into spaghetti on my own, but I have purchased pre-sliced spaghetti squash in the past, and it worked out just fine with this recipe. When prepping your chicken, use a hand mixer to shred it into smaller pieces faster instead of using your hands or a fork.
The Ingredients You Can Add to Customize Your Buffalo Chicken Spaghetti Squash Casserole
Season your chicken with the spices included in the recipe or some of your favorite seasons. Remember, a little bit goes a long way, so you do not need to add too much of these different spices. Garlic powder, Italian seasoning, ground pepper, and adobo are great seasonings to use on the chicken to give it a lot more flavor.
You can also use a buffalo sauce that you prefer. I have a few favorites that I like to use when making the Buffalo Chicken Spaghetti Squash, including Frank’s RedHot Sauce and Texas Pete Buffalo Wing Sauce.
Easy Food Storage Tips
When you have a little extra Buffalo Chicken Spaghetti Squash leftover, put it in a glass or plastic food storage container and keep it stored in the fridge. I like to eat mine for lunch the next day because it is just that good, but you can keep it in the refrigerator for about three days before heating it back up and eating it. I love it reheated with a bit of added bleu cheese crumbles on top.

Buffalo Chicken Spaghetti Squash Casserole

Whether you’re wanting to eat with less carbs or you love spaghetti squash, give this Buffalo Chicken Spaghetti Squash Casserole a try!
Ingredients
- 3 spaghetti squash, cooked and shredded
- 6 cups cooked chicken, cubed
- 4 eggs
- 2 cups half and half
- 1 (8 ounce) package cream cheese
- ¼ cup ranch seasoning mix
- ½ cup buffalo wing sauce
- 3 cups shredded colby jack cheese
Instructions

Preheat oven to 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

In a large bowl, mix together the spaghetti squash and chicken. Divide between the two casserole dishes and create an even layer.

In a large bowl, beat together the eggs, half and half, cream cheese, and ranch seasoning. Pour over the casseroles.

Top the casseroles with a thin layer of buffalo wing sauce. Top with cheese.

Bake for 45 minutes or until the center is set and the cheese is melted.

Garnish with sliced green onions.
