Description

If you love Five Guys cheeseburgers but are trying to consume fewer carbs, make this Low Carb Five Guys Cheeseburger Casserole. It is an impressive savory meal that will make you feel like you are biting into a burger from your favorite fast food joint.

 


Ingredients

  • 4.5 pounds ground chuck 
  • Salt and pepper, to taste
  • 1/1 teaspoon onion powder
  • 1 cup sugar free ketchup
  • ½ cup prepared mustard
  • 1 cup sugar free mayonnaise
  • 1 cup shredded cheddar
  • 16 slices cheddar cheese
  • 1 pound bacon
  • 2 onions, diced
  • 1 (16 ounce) container mushrooms, sliced

 

For serving:

  • Romaine lettuce, chopped
  • Roma tomatoes, diced
  • Hamburger dill pickles

 


Instructions

  1. Preheat the oven to 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

  2. In a large skillet, brown the ground chuck, crumbling the meat as you cook. Season with onion powder, salt, and pepper. 

  3. Drain the meat well and return to the skillet. Add the ketchup, mustard, mayo, and shredded cheese. Stir to combine.

  4. Divide the meat between the two casserole dishes. Cover the meat with slices of cheese.

  5. In the same skillet, cook the bacon until browned. Remove and drain on paper toweling. Keep 1 tablespoon of the bacon grease in the skillet but discard the rest.

  6. To the bacon grease, add the onion. Cook over medium heat until the onions are soft. Stir in the mushrooms and cook for an additional 2 to 3 minutes. Drain any excess grease if needed.

  7. Add the onions and mushrooms over the cheese layer.

  8. Cover the casseroles and bake for 30 minutes or until the cheese has melted.

  9. Remove from the oven and top with crumbled bacon.

  10. To serve, top the casserole with lettuce, tomatoes, and pickles.
