This hearty Slow Cooker Hash Brown Casserole is so delicious and simple! I just LOVE the way it fills my home with a delicious aroma as it is cooking in the slow cooker. Follow these simple steps to make this yummy casserole for breakfast, lunch, or dinner!

How do I make Slow Cooker Hash Brown Casserole?

First, break out your slow cooker and spray the liner with non stick cooking spray. Clean up Jamerrill always likes it when Prep Jamerrill remembers to do this part. Add in your hashbrowns, ham, cheese, onion, and 4 cups of shredded cheese.

In a separate bowl, mix eggs, milk, sour cream, and seasonings. Once that is thoroughly mixed, pour in slow cooker. Combine all ingredients together. Sprinkle 2 more cups of cheese on top. Pop on lid then turn on high for 4 to 6 hours or on low for 6 to 8 hours.

A delicious breakfast casserole that you can serve anytime.


  • 52 ounces shredded hashbrowns
  • 4 cups diced ham
  • half a large onion, chopped
  • 2 cups milk
  • 2 cups sour cream
  • 12 eggs
  • 2 tsps garlic powder
  • 2 tsps onion powder
  • 1 tsp salt
  • 1 tsp pepper



  1. Place shredded hash browns, diced ham, chopped onion, and 4 cups of shredded cheese in a slow cooker.
  2.  In a separate bowl, mix milk, sour cream. eggs, and seasonings.
  3. Once thoroughly mixed, pour in the slow cooker on top of other ingredients.
  4.  Mix all ingredients together with wooden spoon.
  5.  Sprinkle two more cups of shredded cheese on top of the meal.
  6. Put slow cooker lid on securely.
  7. Cook on high for 4 to 6 hours or on low for 6 to 8 hours.


If your hash brown casserole is a little watery, depending on if your hash browns were still frozen or thawed at the time of cooking. A good stir should mix all that in and maybe add a little extra cheese because extra cheese never hurts a thing.

If I go to bed late, I will put large family slow cooker hash brown casserole on low so it’s bubbling when I get up in the morning. If we’re looking at a late breakfast/brunch or eating it for dinner then I will pop it on high. If your casserole looks watery then mix it again. Add some additional cheese to the top, put the lid on, and let it melt. You can never go wrong with more cheese.
