Over the last 15 years, I’ve dabbled in canning and preserving fruit, jams, meat, broth, and some vegetables. Dedicating time to extensive food preservation with canning hasn’t been something I’ve ever been able to do with all my other hats (those little mom of 9, 18 years of homeschooling, and full-time business owner hats 😜). If you’re new to the world of freeze drying, this is a food preservation method that allows you to keep your garden harvest, grocery haul, last night’s left overs, or farm market produce safe and viable for up to 20 years! There’s no need to can or freeze in a deep freeze. Freeze dried food is “shelf stable” and safe food. Running my Large Harvest Right, I’m able to safely preserve up to about 2,500 pounds of food a year.
