Homemade Breakfast Pizza
Breakfast is the most important meal of the day. Everyone needs to a hearty start but lots of breakfast food is carb heavy. Seriously, sometimes I need a nap right after breakfast. Thank you Jesus for coffee to wake me up. Yes and amen!
Homemade low carb breakfast pizza is super easy to make while you work on your first cup of coffee. Preheat oven to 400 degrees. Throw the cream cheese and mozzarella cheese into a microwave safe bowl for 1 minute. Stir to combine. If still lumpy, microwave in 30 second intervals until smooth.
In a smaller bowl, combine almond flour, salt, pepper, and eggs. Once cream cheese mixture is smooth, add the egg mixture. Stir to create a dough. Either split in half and use 2 pans or use your large sheet pan to press out dough. Pierce the dough in several places or it will explode. Seriously, it won’t be pretty. Place in oven for 10 minutes.
While dough is hanging out in the oven, saute the vegetables to make them soft. Add the mushrooms last and cook just until soft. Take the dough out of the oven. Top pizza in this order : beaten eggs, meats, veggies, cheese. Bake for an additional 10 minutes.
