Sometimes you need a meal that isn’t so laden with carbs that you feel sleepy after eating. You don’t want to skimp on flavor and have your family stare at you in disbelief. Low carb buffalo chicken casserole bake will satisfy the hunger while delighting the taste buds. It makes a perfect meal and is freezer friendly.

Buffalo chicken is always bursting with flavor. This version is full of flavor without being burn your mouth spicy. I do have little people who have developing taste buds after all. You can add more buffalo chicken sauce to individual servings or make it just as tasty with some ranch or blue cheese drizzled on each plate. I like to let each person decide individually.
This is the perfect recipe to make with some of that chicken leftover from cooking a whole frozen chicken in the Instant Pot. You can easily whip up this casserole while the bone broth is cooking.
Mix together all the ingredients including 1/2 cup of the cheese in your mixing bowl. To make it easier to mix, pull out the cream cheese a few minutes beforehand to start to soften. Pour into a 9×13 casserole dish and cover with remaining cheese. Bake at 350 degrees for 30 minutes or until the cheese is bubbly and brown.

Ingredients
- 1 to 2 pounds chicken breast, cooked and cubed
- 1 cauliflower, riced (about 5 cups)
- ½ cup buffalo sauce, plus additional for garnish if desired
- 1 (8 ounce) package cream cheese, softened
- 1 cup cheddar cheese
- Sliced green onions, for garnish if desired
Instructions

Preheat oven to 350 degrees. Prepare a 9×13 baking dish with nonstick cooking spray.

In a large bowl, combine cream cheese, buffalo sauce, and ½ cup cheddar cheese. Stir until combined.

Add the chicken and cauliflower to the bowl, mixing well. Transfer to baking dish, spreading evenly.

Top casserole with remaining cheese.

Bake for 30 minutes or until the edges are bubbling and the cheese has melted in the middle.

Remove from oven and drizzle with additional buffalo sauce if desired. Also tastes amazing served with a drizzle of ranch or blue cheese dressing.
Notes
Leftover chicken from cooking a whole frozen chicken in the Instant Pot would be perfect for this recipe. Don’t have time for that? Grab a rotisserie chicken to use instead.
