A yummy breakfast will get your day off to a great start. I always recommend having muffins, breakfast burritos, or a casserole or two in the freezer for a norush way to start the day. We like to refer to this healthy ham and spinach breakfast casserole as green eggs and ham. It’s deliciousness can’t be beat!

Is breakfast really important?

Lots of people wonder if breakfast is really that important. Eating breakfast regularly signals to your body it’s time to get that metabolism going and that there is plenty of food to eat. This helps your body learn that it doesn’t have to store fat in order to stay alive. We all want that, right? Yes and amen! You will just love this low-carb and filling breakfast casserole!!

Start by getting all your ingredients out and on the counter. This one step makes putting it altogether easier. I’m all about fast and easy cooking to go with my mega and lots.

Healthy Spinach & Ham Breakfast Casserole | Low Carb, THM-S, Gluten Free

This recipe makes two casseroles. Eat one today and put the other in the freezer for another busy morning. One casserole will feed my family but they aren’t all teenagers. You could serve with fruit or yogurt to stretch it further. Then again, you could eat both casseroles at one time. Do what works for your people.

Spray two 9×13 bakers with non stick cooking spray. This makes cleanup easier later. In your large mixing bowl, crack open 24 eggs. Add the milk, salt, and pepper then whisk until smooth. Got a stand mixer? You could use that instead.

After the egg mixture is nice and smooth, set it aside. Add half the ham, bacon, spinach, and onion to each baking dish. Pour half the egg mixture into each baking dish. Add a layer of cheese to the top. At this point, you can bake it in a 350 degree oven for 40 – 45 minutes or wrap it up to freeze.

Description

We lovingly call this hearty breakfast casserole, green eggs and ham. It’s easy, delicious, and freezable


Ingredients

  • 24 eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 2 cup cubed ham
  • 12 slices bacon, browned, drained, and crumbled
  • 4 cups spinach, coarsely chopped
  • 1 cup diced onion
  • 4 cups shredded mozzarella

 


Instructions

 

  1. Preheat the oven to 350 degrees.

  2. Spray two 9×13 baking dishes with nonstick cooking spray.

  3. Whisk together the eggs, milk, salt, and pepper until well blended.

  4. To each baking dish, add the ham, bacon, onion, and spinach. Toss together and then create an even layer. Pour half the eggs over the top of each mixture.

  5. Add a layer of cheese to each baking dish.

  6. Bake or freeze.

  7. Bake for 40 to 45 minutes or until the center is set and the cheese is melted and golden on the edges.


Notes

Freezer directions:

  • Instead of baking, wrap casserole dish with 2 layers of aluminum foil then 2 layers of plastic wrap.
  • Keep in freezer 3-6 months. Take out 24 hours before baking to thaw.
