All mamas know the importance of breakfast. You don’t want to feed them cereal every day of the week. Sometimes you need breakfast to be portable so you can get where you need to be at a decent time. Sausage, egg, & cheese breakfast burritos are a hearty yet portable breakfast that you will want to feed your freezer with them often.

Scramble your eggs and cook and drain your sausage. This doesn’t have to happen right before assembly. I often like to precook all my items one day then do freezer assembly on a different day. This keeps you from staying up to 3 AM like someone I know. Ahem!
Place your ingredients in bowls at the assembly station except tortillas. Lay a tortilla out then place one scoop of each remaining ingredient into the center. Fold in sides and roll to close. To freeze, wrap in aluminum foil then plastic wrap. When you want to reheat, unwrap and place in microwave for 1-3 minutes.

These burritos are versatile, portable and super easy to make.
Ingredients
- 2 dozen eggs (scrambled)
- 2 lbs sausage (cooked and drained)
- 2 lbs shredded cheese of your choice
- 50 flour tortillas
Instructions
- Precook anything that needs it like the eggs and sausage
- Put each ingredient in it’s own bowl on the assembly line except the tortillas.
- Lay a tortilla out and add a scoop of each ingredient into the center.
- Fold in sides then roll to close.
Notes
To freeze: wrap in aluminum foil then plastic wrap.
To reheat: Unwrap from aluminum foil and plastic wrap. Pop in microwave for 2-3 minutes.
