Healthy Ham & Spinach Breakfast Casserole | Low Carb, THM-S, Gluten Free

We lovingly call this hearty breakfast casserole, green eggs and ham. It's easy, delicious, and freezable

Ingredients
  

  • 24 eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 2 cup cubed ham
  • 12 slices bacon browned, drained, and crumbled
  • 4 cups spinach coarsely chopped
  • 1 cup diced onion
  • 4 cups shredded mozzarella

Instructions

  • Preheat the oven to 350 degrees.
  • Spray two 9x13 baking dishes with nonstick cooking spray.
  • Whisk together the eggs, milk, salt, and pepper until well blended.
  • To each baking dish, add the ham, bacon, onion, and spinach. Toss together and then create an even layer. Pour half the eggs over the top of each mixture.
  • Add a layer of cheese to each baking dish.
  • Bake or freeze.
  • Bake for 40 to 45 minutes or until the center is set and the cheese is melted and golden on the edges.

Notes

Freezer directions:
  • Instead of baking, wrap casserole dish with 2 layers of aluminum foil then 2 layers of plastic wrap.
  • Keep in freezer 3-6 months. Take out 24 hours before baking to thaw.
