We lovingly call this hearty breakfast casserole, green eggs and ham. It's easy, delicious, and freezable

- 24 eggs
- 1 cup milk
- Salt and pepper to taste
- 2 cup cubed ham
- 12 slices bacon browned, drained, and crumbled
- 4 cups spinach coarsely chopped
- 1 cup diced onion
- 4 cups shredded mozzarella

Preheat the oven to 350 degrees.
Spray two 9x13 baking dishes with nonstick cooking spray.
Whisk together the eggs, milk, salt, and pepper until well blended.
To each baking dish, add the ham, bacon, onion, and spinach. Toss together and then create an even layer. Pour half the eggs over the top of each mixture.
Add a layer of cheese to each baking dish.
Bake or freeze.
Bake for 40 to 45 minutes or until the center is set and the cheese is melted and golden on the edges.
Freezer directions:
- Instead of baking, wrap casserole dish with 2 layers of aluminum foil then 2 layers of plastic wrap.
- Keep in freezer 3-6 months. Take out 24 hours before baking to thaw.
