Green Chili Chicken Casserole ~ Low Carb Recipes!

In the mood for something a wee bit spicy but not burn your mouth off spicy? This low carb green chile chicken casserole will curb that craving perfectly. This recipe makes one 9x13 pan. Do this recipe twice to make TWO 9x13 pans and truely be large family style!

- 4 boneless skinless chicken breast
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon garlic powder divided
- 1 teaspoon cumin divided
- 1 teaspoon chili powder
- 1 cup sour cream
- 1 8 ounce package cream cheese, softened
- 1 7 ounce chopped green chilies

- 1 cup shredded colby jack cheese
Preheat oven to 350 degrees. Spray a 9x13 baking dish with non-stick cooking spray.
Sprinkle chicken breasts on both sides with salt, pepper, and a pinch of garlic powder, cumin, and chili powder. Place chicken in baking dish.
In a medium bowl, blend together the remaining seasonings with sour cream, cream cheese, and green chilies. Spread over chicken. Top with shredded cheese.
Bake for 1 hour or until chicken reaches an internal temperature of 165 degrees.
Top with your choice of garnish: diced tomatoes, sliced black olives, chopped fresh cilantro, additional sour cream, etc.
