Sprinkle both sides of the chicken with salt, pepper, and a dash of cumin, garlic powder, and chili powder. You could spice things up a bit in one pan by adding more chili powder or tone it down in one pan by not adding it. This is the part where you control the spiciness.
In a bowl combine sour cream, cream cheese, green chilies, and the remaining seasonings. Slather all over the top of each chicken piece. Top with shredded cheese then bake for 1 hour at 350 degrees. Make one for the freezer by not wrapping and freezing before baking.

Ingredients
- 4 boneless, skinless chicken breast
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon garlic powder, divided
- 1 teaspoon cumin, divided
- 1 teaspoon chili powder
- 1 cup sour cream
- 1 (8 ounce) package cream cheese, softened
- 1 (7 ounce) chopped green chilies
- 1 cup shredded colby jack cheese
Instructions

Preheat oven to 350 degrees. Spray a 9×13 baking dish with non-stick cooking spray.

Sprinkle chicken breasts on both sides with salt, pepper, and a pinch of garlic powder, cumin, and chili powder. Place chicken in baking dish.

In a medium bowl, blend together the remaining seasonings with sour cream, cream cheese, and green chilies. Spread over chicken. Top with shredded cheese.

Bake for 1 hour or until chicken reaches an internal temperature of 165 degrees.

Top with your choice of garnish: diced tomatoes, sliced black olives, chopped fresh cilantro, additional sour cream, etc.
