What do I need to make the Instant Pot Chorizo and Pinto Beans?
You’ll need your Instant Pot plus 18 ounces of beef Chorizo. You can substitute pork if that’s what you prefer. You will also need olive oil for cooking.
For the produce and seasonings, you will need onion, garlic, and cilantro.
From your pantry, grab:
- 1 (32 ounce) package dry pinto beans
- 1 (15 ounce) can diced tomatoes
- 1 (10 ounce) can diced tomatoes and chiles
- 6 cups chicken stock
- 2 bay leaves
- Salt and black pepper, to taste
Finally, you’ll want to have crumbled queso fresco to garnish it when it’s finished. However, leave it off if you want this dish to be dairy-free.
How Do I Make the Instant Pot Chorizo and Pinto Beans?
If you’ve used an instant pot before, you’ll know that this is an easy recipe to make. The Instant pot does most of the work so don’t let the steps fool you into thinking it’s a hard one to make. Here is the gist of it, but be sure to check the recipe card to have all the details.
Saute the chorizo in olive oil in the Instant Pot until chunks begin to form, about 8 minutes.
Add onion and cook until soft, then add about 1 cup of the chicken stock and scrape the bottom with a wooden spoon to remove any stuck-on bits.
Finally, add the garlic, beans, diced tomatoes, diced tomatoes and chiles, remaining chicken stock, and bay leaves. Cover and seal and cook for 45 minutes.
Use a manual release and garnish with crumbled queso fresco and cilantro. That’s it! You’re sure to impress your whole family with these flavors.

Large Family Instant Pot Chorizo and Pinto Beans

2 (9 ounce) packages beef chorizo
2 onions, chopped
3 cloves garlic, minced
1 (32 ounce) package dry pinto beans

Instructions

Set the electric pressure cooker to “saute” until “hot.” Add the olive oil.

In the electric pressure cooker, add the chorizo and cook until chunks begin to form, about 8 minutes. Add the onion and continue to cook until the onion has softened.

Add about 1 cup of the chicken stock and scrape the bottom with a wooden spoon to remove any stuck on bits.

Then, add the garlic, beans, diced tomatoes, diced tomatoes and chiles, remaining chicken stock, and bay leaves.

Place the lid on the electric pressure cooker and set the valve to sealing. Program the electric pressure cooker to “pressure cook” or “manual” for 45 minutes. When the cooking cycle is complete, allow the pressure to release manually. Carefully remove the lid.

Garnish with crumbled queso fresco and cilantro. Leave off the queso fresco for dairy-free option.
