How do I make the Large Family Instant Pot Ham and Potato Hash?

You’ll spend only about 15 minutes prepping and cutting this meal and two whole minutes waiting on the Instant Pot to make it (minus the time it takes to build pressure)! You’ll be able to get so many other things done instead of cooking all day. Plus, you have a homecooked meal!

Start by cutting then sauteing the ham, onion, and bell peppers in oil and butter (use only olive oil for dairy-free version) until the vegetables have softened slightly.

Next, add the chicken stock and scrape the bottom with a wooden spoon to remove any stuck-on bits, then add the potatoes and sprinkle with seasonings.

Finally, cook on high pressure for 2 minutes and perform a quick release and garnish with black pepper and parsley.

That’s it! Enjoy this homestyle meal and be sure to add it to your large family menu.

Ingredients

2 tablespoons olive oil

2 tablespoons butter – for dairy-free just use olive oil

3 pounds cooked ham, diced

1 onion, chopped

1 red bell pepper, seeded and diced

1 green bell pepper, seeded and diced

5 pounds russet potatoes, scrubbed and cut into 2-inch pieces

1 teaspoon garlic powder

Salt and ground black pepper, to taste

½ cup chicken stock

Freshly cracked black pepper, to garnish

Chopped fresh parsley, to garnish

Instructions

  1. Set the electric pressure cooker to “saute” until “hot.”

  2. In the electric pressure cooker, pour the olive oil and add the butter. As the butter melts, swirl to coat the bottom of the liner.

  3. Add the ham, onion, and bell peppers to the electric pressure cooker. Saute until the vegetables have softened slightly.

  4. Add the chicken stock and scrape the bottom with a wooden spoon to remove any stuck-on bits.

  5. Add the potatoes and sprinkle with seasonings. Toss to evenly distribute the ham with the potatoes.

  6. Place the lid on the electric pressure cooker and set the valve to sealing. Program the electric pressure cooker to “pressure cook” or “manual” for 2 minutes. When the cooking cycle is complete, perform a quick release of the pressure. Carefully remove the lid.

  7. Garnish with black pepper and parsley.
