Ingredients
2 tablespoons olive oil
2 tablespoons butter – for dairy-free just use olive oil
3 pounds cooked ham, diced
1 onion, chopped
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
5 pounds russet potatoes, scrubbed and cut into 2-inch pieces
1 teaspoon garlic powder
Salt and ground black pepper, to taste
½ cup chicken stock
Freshly cracked black pepper, to garnish
Chopped fresh parsley, to garnish
Instructions

Set the electric pressure cooker to āsauteā until āhot.ā

In the electric pressure cooker, pour the olive oil and add the butter. As the butter melts, swirl to coat the bottom of the liner.

Add the ham, onion, and bell peppers to the electric pressure cooker. Saute until the vegetables have softened slightly.

Add the chicken stock and scrape the bottom with a wooden spoon to remove any stuck-on bits.
