Homemade Mixed Berry Muffins Recipe

These mixed berry muffins are a great breakfast option and a fabulous addition to freezer inventory for those hectic mornings.

Cook Time 20 minutes

Ingredients
  

  • 1 ½ cups flour
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • cup sugar
  • 2 eggs
  • cup vegetable oil
  • cup greek yogurt
  • 1 teaspoon vanilla
  • 1 cup frozen mixed berries cut into similarly sized pieces tossed in 1 tablespoon flour
  • ½ cup turbinado sugar

Instructions

  • Preheat oven to 375 degrees. Prepare a 12-cup muffin pan with cupcake liners. Spritz liners with non-stick cooking spray.
  • In a medium bowl, whisk together flour, baking soda, salt, and sugar.
  • In a large mixing bowl, whisk together eggs, yogurt, vegetable oil, and vanilla. Stir together wet and dry ingredients until just combined.
  • Toss berries in 1 tablespoon flour and then add to batter.
  • Divide the batter into 12 muffin cups. Top with turbinado sugar.
  • Bake for 18 to 20 minutes. Allow to rest in muffin tin for 5 minutes before moving to cooking rack.

Notes

These muffins freeze well so make several batches to feed your freezer.
