Homemade Mixed Berry Muffins Recipe

These mixed berry muffins are a great breakfast option and a fabulous addition to freezer inventory for those hectic mornings.

- 1 ½ cups flour
- 2 teaspoons baking soda
- ¼ teaspoon salt
- ⅔ cup sugar
- 2 eggs
- ⅓ cup vegetable oil
- ⅔ cup greek yogurt
- 1 teaspoon vanilla
- 1 cup frozen mixed berries cut into similarly sized pieces tossed in 1 tablespoon flour
- ½ cup turbinado sugar
Preheat oven to 375 degrees. Prepare a 12-cup muffin pan with cupcake liners. Spritz liners with non-stick cooking spray.
In a medium bowl, whisk together flour, baking soda, salt, and sugar.
In a large mixing bowl, whisk together eggs, yogurt, vegetable oil, and vanilla. Stir together wet and dry ingredients until just combined.
Toss berries in 1 tablespoon flour and then add to batter.
Divide the batter into 12 muffin cups. Top with turbinado sugar.
Bake for 18 to 20 minutes. Allow to rest in muffin tin for 5 minutes before moving to cooking rack.
