Large Family Black Bean and Beef Quesadilla Freezer Meals | Large Family Lunch Ideas

When you want a beefy quesadilla that will satisfy your craving for something with plenty of added flavor, the Black Beans and Beef Quesadilla is a recipe you need to try. Dip it into your favorite sauce and enjoy the simple and easy dinner with the family. This large family recipe is also freezer friendly!

Cook Time 15 minutes

Ingredients
  

  • 6 cups taco meat
  • 2 8 ounce can black beans, rinsed and drained
  • 2 8.2 ounce packages fajita size flour tortillas
  • 2 cups shredded fiesta blend cheese
  • ¼ cup butter melted
  •  

Instructions
 

  • Preheat the oven to 375 degrees. Prepare a large baking sheet with aluminum foil and spritz with nonstick cooking spray.
  • Place tortillas on the baking sheet. Sprinkle cheese over ½ of each tortilla. Then, sprinkle with beef, beans, and additional cheese. 
  • Fold the tortillas over and brush with melted butter.  
  • Cover the tortillas with another baking sheet.
  • Bake between the two pans for 15 minutes.  Remove the top pan and continue to bake for 8 minutes.

Notes

Large Family Freezer Meal Directions: To make these Large Family Quesadillas into a freezer meal just assemble as directed above. Wrap, label and freeze for up to 3 months. When you want Quesadillas from the freezer, and if you're in a hurry, you can microwave a few Quesadillas at a time for 2 or so minutes (microwave times may vary.) Or you can defrost and follow the baking directions above. It's great to have all the freezer meal prep work done and have your large family meals ready for the oven!
