Ingredients
  

  • 2 cups old fashioned oats
  • 2 cups buttermilk
  • 2 eggs beaten
  • 1 cup packed brown sugar
  • ½ cup butter melted
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup raisins
  •

  • Preheat the oven to 400 degrees. Prepare two muffin tins by lining with paper liners and spritzing with nonstick cooking spray.
  • Combine the oats and buttermilk in a large bowl and let soak for 15 minutes.
  • Whisk the dry ingredients together in a medium bowl and set aside.
  • Combine eggs, brown sugar, and butter together and stir into the oat mixture. Then add the wet mixture into the dry ingredients and stir until moistened. Stir in the raisins.
  • Using a large cookie scoop or large spoon, fill the prepared muffins cups about ¾ full.
  • Bake for 15 to 18 minutes or until a toothpick comes out clean.  Cool in the pans for 10 minutes before removing to a wire rack.
