Large Family Freezer Friendly Baked Taco Spaghetti

Filled with all of the yummy ingredients of tacos, Large Family Freezer Friendly Baked Taco Spaghetti is a fun way to feed everyone.

Ingredients
  

  • 2 16 ounce packages spaghetti noodles, cooked according to package directions
  • 2 ½ pounds lean ground beef
  • 2 envelopes taco seasoning mix
  • 1 ½ cups water
  • 2 15 ounce cans black beans, drained and rinsed
  • 2 10 ounce cans mild diced tomatoes and chiles
  • 1 16 ounce jar mild salsa
  • 1 15 ounce jar salsa con queso
  • 4 cups shredded fiesta cheese blend

Instructions
 

  •  
  • Preheat the oven to 350 degrees. Prepare two 9x13 casserole dishes with nonstick cooking spray.
  • In a 15 inch skillet, cook the ground beef until no longer pink, crumbling the meat as it cooks. Drain the meat of excess grease. 
  • To the ground beef, add the taco seasoning, water, and beans. Cook, stirring as needed, for about 5 minutes or until the water begins to evaporate and the sauce thickens.
  • Stir in the tomatoes, salsa, and salsa con queso, stirring often as it simmers for an additional 10 minutes.
  • In a large bowl, toss the cooked pasta with the sauce. Divide the pasta between the two casserole dishes. Top tthe casseroles with the cheese.
  • Cook in the oven for 20 minutes or until the cheese has melted and is hot and bubbly. ***Casseroles should be heated to a minimum internal temperature of 165 degrees.***
  • Top with chopped cilantro prior to serving.

Notes

Freezer Instructions:
Once you’ve prepared the meal, you can wrap it in aluminum foil and plastic wrap or put a freezer-safe lid on it before putting it in the freezer to keep it fresh. Don't forget to add your label! You can leave the meal in the freezer for a at least 3 months before reheating. You can also assemble smaller portions into freezer-safe bags and store them that way to save space. 
 
To thaw, take your meal from the freezer to the refrigerator the day before. When you're ready to reheat, just follow the baking directions above! (Casseroles should be heated to a minimum internal temperature of 165 degrees.)
