Large Family Instant Pot Salsa Chicken

Salsa Chicken is a super easy way to add a little spice to any meal. Made with either fresh or frozen boneless, skinless chicken breasts, this recipe is a fix-it-and-forget-about-it way to have a Large Family meal in your home

Ingredients
  

  • 5 to 6 large boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 1 teaspoon garlic powder
  • 3 cups salsa
  •  

Instructions

  • In the electric pressure cooker, pour the olive oil and swirl to coat the bottom of the liner.
  • Add the chicken, sprinkling with the seasonings as you layer the chicken.
  • Over the chicken, pour the salsa.
  • Place the lid on the electric pressure cooker and set the valve to sealing. Program the electric pressure cooker to “pressure cook” or “manual” for 20 minutes. When the cooking cycle is complete, allow the electric pressure cooker to naturally release the pressure for 5 minutes before performing a quick release of the remaining pressure.
  • Carefully remove the lid and shred the chicken with two forks.
  • Use the chicken for burritos, tacos, nachos, or quesadillas.

Notes

Freezer Instructions:
Once you’ve cooled your prepared Salsa Chicken, put it in a freezer-safe container before putting it in the freezer to keep it fresh. Don't forget to add your label! You can leave the meal in the freezer for a at least 3 months before reheating. You can also assemble smaller portions into freezer-safe bags and store them that way to save space. 
To thaw, take your Salsa Chicken from the freezer to the refrigerator the day before. When you're ready to reheat, just place it into the Instant Pot and set for Slow Cook for about 3 hrs, or until it reaches desired warmth.
