Large Family Instant Pot Teriyaki Chicken and Brown Rice | Dairy Free

Does your large family love to eat Asian cuisine? You will love this new Large Family Instant Pot Teriyaki Chicken and Brown Rice Recipe I’m sharing today! It’s quick, easy, for the InstantPot, freezer friendly, and DAIRY FREE too! Better than takeout in my opinion, and all ready for a large group.

Ingredients
  

  • 5 to 6 large boneless skinless chicken breasts, cubed
  • cup soy sauce or liquid aminos
  • cup hoisin sauce
  • 3 tablespoons rice wine vinegar
  • 2 ½ teaspoons garlic powder
  • 1 pound carrots peeled and cut into large chunks
  • 2 cups chicken stock
  • 2 cups brown rice
  • 1 12 ounce package fresh broccoli florets, cut into small pieces
  • 2 red bell peppers seeded and diced
  • Sliced green onions for garnish
  • Sesame seeds for garnish

Instructions
 

  • In the electric pressure cooker, combine the chicken, soy sauce, hoisin sauce, rice wine vinegar, and garlic powder.
  • Over the chicken, place the carrots and rice. Pour the chicken stock over the top.
  • Place the lid on the electric pressure cooker and set the valve to sealing. Program the electric pressure cooker to “pressure cook” or “manual” for 5 minutes. When the cooking cycle is complete, allow the electric pressure cooker to naturally release the pressure for 5 minutes before performing a quick release of the remaining pressure.
  • Carefully remove the lid and stir in the broccoli and red bell pepper. Cover and all the meal to “keep warm” for 5 minutes.
  • Serve topped with green onions and sesame seeds if desired.
